In the bottom of a highball glass muddle the mint with a bit of syrup. Muddle until the mint leaves are pretty well broken down.
Fill the glass 3/4 full with ice.
Add bourbon, and then top with a little more seltzer water.
Garnish with a sprig of mint and enjoy.
Use a highball glass or really go all out and get a metal julep cup.
